Avial


Avial is the most common and important and unique vegetable dish of the people of Kerala. It is an essential dish in a Sadya or feast.

The traditional avail is made with vegetables like yam, cucumber, drumstick, pumpkin, raw banana and ash gourd and snake gourd. But now people make it with any available vegetables and carrots and beans also get a place in avail. Anyway it is a dish anyone would love to taste.

Cut all the vegetables in equal quantity and cut into 3 inch pieces lengthwise. Add a tsp of coconut oil and cook the vegetables with very little water. Mix a pinch of turmeric and chilli powder to the vegetables.

Grind together half a coconut, green chillies, turmeric, chilli powder and a pinch of jeera. Grind coarsely without adding water.

When the vegetables are cooked add tamrind pulp or sour curds. Even raw mangoes can be added to make it sour.

Finally add salt and the ground paste and heat on low flame. Don’t add any water with the coconut paste. When done, pour a tablespoon oil and curry leaves over the avial and keep covered. Serve with Rice.
