In Kerala it is Aval Uppuma. But the North Indians call it Poha and they make it with white beaten rice. I learned it from my friends in Madhya Pradesh where they serve it for breakfast or as an evening snack.
Ingredients
Aval or beaten rice 1 cup
Onion 2 big
Green chillies 5
Ginger
Lemon 1
Corriander leaves
Red chilli powder 1 tsp
Turmeric ¼ tsp
Mustard seeds, Cumin seeds and dry red chillies for the seasoning.
Salt
How to make
Take the beaten rice in a colander and wash with as little water as possible. Mix turmeric, salt and chilli powder and keep aside.
In a pan, do the seasoning and then add finely cut onions, green chillies and ginger. Fry well and then add the beaten rice and salt. Heat well till the water is evaporated, add lime juice and coriander leaves.
We can garnish the Poha with potato chips and fried groundnuts.
