Palak is not easily available in all south Indian cities. It is a green leafy vegetable and can be prepared in many ways.
This recipe will have a Kerala touch and flavor.
Things needed
A bunch of Palak leaves cleaned and cut finely.
Onion- 1 large cut into fine pieces
Coconut scrapings- ½ cup
Green chillies -2
Salt
Seasoning
Jeera
Oil
Mustard seeds
Dry chillies
Curry leaves
A pinch of turmeric and red chilli powder
How to make.
Pour oil in heated pan and add the seasonings. Then add the green chillies and onion. Stir for a few minutes and then add the palak. No need to cover the vessel. Keep in low fire and stir occasionally till the water is absorbed. Add coconut scrapings, stir and remove from fire.
This dish goes well with rice or chappathi
