Brinjal – 6 small
Select 5 or 6 small Brinjals, clean and slit into two without separating to two pieces.
Grind together 1 large onion,1 tsp ginger-garlic paste, turmeric, salt, 1 tbs red chilli powder, 2 tbs coriander powder, and 1 tsp garam masala powder.
Fill and cover each Brinjal with this paste. Heat 3 tbs oil in a non- stick pan and place the Brinjals carefully in the pan. Keep the flame low, cover the pan and cook. Keep turning the Brinjals after every 2 minutes. When the masala gets brown remove from fire.
Serve with chappathi or Nan.
