Carrot Thoran [Kerala style]



Ingredients

Carrot- 3 medium size

Onion – 1 big

Green chillies -2

Coconut scrapings- ½ cup

Salt

Oil -1tbs

Curry leaves

How to make

Scrape the carrots, [not too fine]. Cut the green chillies and onion into fine piece. Heat a pan, add oil and the tempering, mustard seeds, jeera,and a dry red chilly. When the mustard starts spluttering add all other ingredients except coconut. Cover the pan and cook in a low flame. It takes only a few minutes. When done, add coconut scrapings, stir well and remove from fire. Serve with rice or chappathi.
