Mango Pickle - Easy method




You need

Raw Mangoes – 4

Red chilli powder – ½ cup

Fenugreek [uluva]powder -1 tsp

Asafetida [kayam] – 1 tsp

Turmeric powder 1 tsp

Salt

Gingerly oil [Nallenna] – 1 cup

How to make…

Cut the mangoes into very small pieces. Heat a pan, add oil, when the oil start boiling add seasoning, mustard seeds and red chillies. Then add all spices and switch off the gas. Immediately add the mango pieces, mix and keep covered for a few minutes. Then add salt. Add salt in the end, otherwise the pickle will get watery. Pickle is ready to use.

Cool and preserve the pickle in a bottle. This won’t get spoiled for months if you keep in a refrigerator. If it is to be kept outside, boil half a cup of vinegar and add to the pickle.
